My dear mother surprised me yesterday afternoon with a pan of her tasty beef and cheese enchiladas to cook for supper.
She used the chili powder we bought her in Chimayo, New Mexico during our trip last month. They were just wonderful. When my Sweetie got home from his business trip last night I just popped them in the microwave long enough to heat it through and melt the cheese, cut up a couple of garden fresh tomatoes, then had a feast.
